Chilled Tier Soup


 

Weather is improving here in chicago, feels like summer is just around the corner & make it feel more closer just made this summer soup :) hope you all njoy it too

For me summer is all about beaches & refreshing food/ drinks. This summer soup is true promise to experience that refreshing heaven on earth.....to beat that heat :)

Presenting Tiered Soup - Tomato & Avocado

Yes you heard it rite...its a tier of tangy tomato, creamy avocado with fresh mint, topped with crunchy cucumber, onion & mint leaves :) it a perfect balance of flavor, texture & taste.... a true sense of summer refreshment :)

While writing this post I am enjoying every sip of it....yeah I am officially in heaven

Idea adopted from myreceipe.com, modified to Indian taste buds.

For Tomato Tire

2 ripe tomatoes
1 tsp vinegar
1/2 tsp sugar
Salt to taste

For Avocado Tire

1 firm ripe avocado
1/8 cup vegetable broth
1 tbsp sour cream
1 tbsp lime juice
10-12 fresh mint leaves
Salt to taste

For Garnishing

½ cucumber finely chopped
¼ onion finely chopped
7-8 mint leaves finely chopped

Rinse tomatoes; cut into chunks. Whirl in a food processor until smooth, then rub through a fine strainer into a bowl. Discard residue. Season purée with vinegar, sugar and salt. Cover and chill until cold, at least 1 hour.
Peel and pit avocados; cut into chunks. In a food processor, whirl avocados, broth, sour cream, and lime juice & mint leaves until smooth. Add salt to taste. Cover surface with cling wrap and chill until cold, at least 1 hour.
Peel cucumber; cut and scoop out seeds. In a small bowl, mix cucumber, onion, mint leaves & 1 tablespoon vinegar. Cover and chill until cold, at least 30 minutes.

To serve, stir avocado mixture to blend and pour into glasses. Whisk tomato mixture to blend and gently pour over avocado. Top with chopped-cucumber mixture.
